The best way to start the day…

CUPCAKES!

Yesterday when I arrived at work, I was THRILLED to hear that the cafe downstairs was giving away free mini cupcakes to the tenants in the building until 10 AM. Cupcakes are heavenly on their own, but FREE cupcakes are on a whole other level. Hallelujah! :)

Needless to say, this got the day started on the right foot. I attempted to “save” the cupcakes until lunch, but they were just sitting there looking all pretty + tasty! It would have been mean to ignore them, right? Right?

Last night I met up with some of my best girlfriends after work for some eats + drinks at Earls, one of my favourite spots in Toronto. It was SO good to see them before leaving on the big Euro trip! My friend Katie will ALSO be in Europe at the same time, but unfortunately our paths won’t be crossing! We’re a travelling bunch, clearly!

Dinner was a SPECTACULAR salad of baby spinach, brie, shredded apple, pecans, dried cherries + pecan mushroom-crusted chicken. MM MM good. The salad was also meant to come with carrots (removed because of my allergy) + bacon (pigs are my favourite animal). Even with these removed, it was deelish. I think dried cherries are the best thing since Cadbury’s PB & Pretzel chocolate bar.

Today was super busy at work & I ended up not getting home until 8:30 tonight. This meant that I was a) very hungry + b) very tired, soo.. I made a lazy-girl meal!

Why is it that the easiest, most simplest meals always end up tasting the best? Hey.. I’m not complaining ;)

Tonight’s lazy meal comprised of a satisfying egg sandwich  on rye. In the mix – scrambled eggs with kale, slice of turkey, mixed greens, Havarti cheese + sundried tomato pesto. On the side, pickles + spiced lentil + veggie soup. YUM. Lately, I’ve been absolutely obsessed with the Jamie Oliver Sundried Tomato Pesto. In case you haven’t noticed, I’ve been spreading it on literally every sandwich for the past little while. It’s just so yummy & adds the perfect punch to sammies.

It sells for about $4.99, which really isn’t too bad if you become as obsessed with it as I am ;)

Since I’ve been busy lately, I didn’t have time to squeeze in a workout yesterday or today. Eeee. I guess this is my no exercise warm-up for Europe? Hahah.. I’ll just keep telling myself that anyway. After finishing up packing + laundry, I plan on doing this stretching video from Fine Tune Pilates before hitting the hay!

Off to run around like a crazy woman as I attempt to get everything ready for the trip!
