Good evening, dear readers! It’s been a while! I need to tell you that I’ve been SUPER busy lately, which is why the blog hasn’t been receiving much attention as of late. Lots of exciting things are going on at work, so I’ve been doing the classic wake up-eat-go to work-get home-workout-eat-sleep cycle & haven’t much time to devote to anything else. Luckily, I love my job so this isn’t necessarily a negative thing; for now, I’m just not able to devote as much time as I would like to my little outlet on the world wide web, and for that I apologize. I do promise that there are a ton of other INCREDIBLE blogs that will keep you entertained day-to-day when I’m being lame (see “MY FAVOURITES” for some ideas). I will try to keep posting at least once a week, though it likely won’t be my usual 3-4x until things settle down a bit!

Before I leave to go back into my black hole of busy-ness, I want to share a really yummy comfort food recipe with you guys. It’s {relatively} healthy, quick & easy to put together + is just so so delicious – BUTTER CHICKEN PIZZA (see recipe below)
BUTTER CHICKEN PIZZA
- Time: 30-minutes
- Serves: 2
- Ingredients:
- 1 boneless, skinless chicken breast (chopped)
- 1/2 c. butter chicken cooking sauce (or make your own if you’re feeling inspired!)
- pizza crust (I used a gluten-free one, unfortunately)
- 1 tbsp. canola oil
- Tomato sauce
- 1/2 c. mozzarella cheese, shredded
- 1 green onion, thinly sliced
- 1/2 c. chickpeas
- spinach
- 1/2 sweet potato, cubed (optional. NOTE: this adds more time to the recipe as you’ll have to bake the SP first!)
Directions:
1) Preheat oven to 400 degrees Celcius.
2) In a large skillet or wok, heat oil over medium + cook onions, stirring until tender + golden (approx. 7 minutes).
3) Add chicken + cook until golden on the outside (~5 min). Stir in butter chicken sauce.
4) Spread tomato sauce on pizza crust, then layer on other toppings (spinach, chicken + onion mix, chickpeas + sweet potato). Sprinkle with cheese.
5) Bake on middle oven rack until cheese is melted (~12 minutes).

If you like curries or Indian-inspired food at all, you’ll LOVE this recipe! I absolutely die for butter chicken, so this recipe is a real winner in my books (aside from the nasty gluten-free crust). If anyone has any suggestions for good gluten-free pizza crust (or any bread product for that matter), don’t be a stranger

I know what you mean by being so busy! I think its great that you love what you do though, certainly makes it easier! That pizza looks delish! So interesting- I love the mix cultural foods!
